Copycat Tollhouse Keto Chocolate Chip Cookies

If you’re looking for the PERFECT keto chocolate chip cookie - this is it! There’s no added sugar (except monkfruit) and this is yet another recipe full of healthy fats. I promise, these cookies don’t disappoint - even with the pickiest of crowds.

Looking for some pro recipe tips? My suggestion is to make the dough and then store as a ‘log’ (in plastic wrap) in the fridge or freezer. It will be soft right after it’s mixed, so you can lay a long sheet of plastic wrap on the counter, take a spatula and do your best at getting it into a log shape. Then you can wrap the log with plastic wrap to give it a more perfect log shape. If you leave in the fridge for a few hours, it will harden and you can further refine the shape before placing into the freezer. Then you can quickly cut the cookies in slices and throw on baking sheet for warm cookies whenever you need them. You can also store leftover cookies in the fridge.

Lastly, if you don’t have chocolate chips, you can roughly cut up a chocolate bar (>80% cocoa for maximum healthiness) or skip. And the pecans are optional, but a nice touch for something different! You could also use walnuts or any other nut you prefer.

I once again was inspired by this amazing keto-centric blog (original recipe here).
