A healthy take on childhood favorite

Who's doesn't love peppermint patties? After cutting out refined sugar, I've been looking for 'healthier' replacements for some of favorite candies and this recipe does exactly the trick! Feel free to double or even triple this recipe so you have plenty of these cute candies on hand in the freezer when you craving a little sweets.

Serves: 12 regular patties or 24 mini patties
Prep time: 15 minutes


  • 1 cup of soaked cashews (soak in water overnight or in very hot water for 1-2 hours)
  • 1 cup of coconut oil melted
  • 1/2 cup of maple syrup
  • 4 tbsp of full-fat coconut milk
  • 2 tsp of peppermint extract
  • For the chocolate coating:
  • 1 cup of cocoa powder
  • 1/2 cup of coconut oil
  • 2 tbsp of raw honey
  • 1 tsp of vanilla
  • Maldon salt flakes to taste


  • Combine the soaked cashews, 1 cup of coconut oil, maple syrup, coconut milk and peppermint extract into a high powered blender. You are going to blend on the highest speed for ~5 minutes. NOTE: It may seem like a long time, but you want the ingredients to be FULLY combined. I made the mistake once of not blending for long enough, and the oil and cashews separated when I put them in the cupcake molds. The goal is to get a creamy almost peanut butter like consistency. 
  • Pour the creamy cashew mixture into ~12 regular cupcake molds or ~24 mini cupcake molds (I like using silicone cupcake molds as they are easier to pop out at the end)
  • Freeze for at least 30 minutes to harden (you can leave them in for longer if you have other things going on)
  • When there's ~5 minutes left on the timer, start making the chocolate 
  • Combine the cocoa powder and coconut oil into a small saucepan
  • When the ingredients are FULLY combined and there are no more cocoa chunks, turn off the heat and add the honey and vanilla
  • Remove the creamy patties from the freezer and pop them out onto a baking sheet of parchment paper
  • Carefully dip each patty into the melted chocolate mixture and flip over so fully covered in chocolate and then carefully place back onto the sheet of parchment paper. Sprinkle a dash of Maldon salt on top of the melted chocolate patty
  • Repeat this step for the rest of the creamy patties
  • After you've finished covering the patties in chocolate, place back into the freezer until fully hardened (~30 minutes)
  • You can store the patties in glass container in the freezer or the fridge, but you won't want to leave them out since they'll melt! I like leaving them in the freezer since they almost turn into ice cream treats! For a softer consistency, store in the fridge
  • Serve and enjoy!
