DIY Coconut Milk

Yes, it's super easy to buy a half gallon carton of pre-made Coconut Milk, but have you looked at the long list of ingredients on the back? There's barely any coconut in that stuff!! Ditch the extra crap, save a few bucks and make your own! And yes, you'll have to buy a nut bag (I know it's a silly word - and my husband now calls me a nut bag -- which is totally appropriate!) and make this DIY coconut milk. It's my go-to coffee addition in the morning or added to my homemade hot breakfast cereal.

Cook time: 20 min
Yields: ~4 cups

Ingredients:

Instructions:

  1. Heat water until hot but NOT boiling
  2. Add shredded coconut to high-speed blender (love my Vitamix!)
  3. Carefully add the hot water to the shredded coconut along with the vanilla and salt (if using) 
  4. Blend on high for four minutes until thick and creamy
  5. Let cool to the touch (you'll be squeezing the nut bag with your hands, so you don't want the mixture to be too hot!)
  6. Pour the mixture through the nut bag into a bowl
  7. Squeeze to extract as much coconut goodness as possible from the nut bag
  8. Store in a glass container (love this one!) for a few days
