It's nearly impossible to find a good mayonnaise in the North Fork. The store bought stuff is always vegetable oil based AND contains sugar! Even the jars that claim to be 'olive oil' mayonnaise have more canola oil than olive oil! And the point of adding sugar to mayonnaise is completely nonsensical. I can't rationalize that one at all. The best alternative has been buying Primal Kitchen's mayo on Amazon, but each jar runs you more than $10! This is a super simple recipe that will save you lots of money and it doesn't require a lot of time.
Please do yourself a favor and buy a small food processor. You're going to need to SLOWLY pour the olive oil through a spout in order to get the right fluffy creamy consistency. You can try using an immersion blender in a mason jar, but you might need a second set of hands to ever so slowly pour the olive oil into the rest of the ingredients.
Serves: 1 1/4 cups
Prep time: 10 minutes
- 1 tbsp of lemon juice
- 1 tbsp of dijon mustard
- Dash of salt
- 2 egg yolks
- 1 cup of avocado oil OR light olive oil OR melted coconut oil
- Combine the lemon juice, dijon mustard, salt an egg yolks in a mini food processor and mix until combined
- While the processor is on, slowly pour the oil through the spout until combined (this is the most critical part of the recipe! If you just dump the olive oil into the ingredients it won't get fluffy)
- Salt to taste
- Serve and enjoy!
