Perfect Caesar Salad Dressing Recipe

There's nothing better than a great Caesar salad. Lately, I've been having a hard time spicing up my daily salad routine and I decided to swap my usual lemon and olive oil dressing for something a bit more wild. That's where Caesar dressing comes in! It's super easy to make and if you take my advice and use a mini food processor it will be easy to make and turn out extra creamy and delicious. 

You can put this on almost any type of lettuce. I recently even tried on top of spinach and arugula with carrots, celery and fennel and it was delicious! 

Serves: ~2 cups of dressing
Prep time: 10 minutes


  • 1 egg yolk
  • 1 tbsp of dijon mustard
  • 1/2 cup of freshly squeezed lemon juice (about 3-4 lemons)
  • 2 cloves of garlic
  • 10 anchovies or about 1 can (optional but highly recommended!) 
  • 1 1/2 cups of good olive oil
  • Salt and pepper to taste
  • 1/2 cup of grated Parmesan cheese (optional, omit if on Whole30)


  1. Add the egg yolk, dijon mustard, lemon juice, garlic, anchovies, salt and pepper to a small food processor
  2. Blend until combined
  3. While the food processor is turned on, slowly pour the olive oil through the spout of the food processor (this is a critical step that ensures the dressing is combined, creamy and delicious!)
  4. If using, add the Parmesan cheese and blend until combined (just a few seconds!)
  5. Serve and enjoy! And if there's extra, store in the fridge for later
