Carbone's Copycat Paleo Spicy Rigatoni Vodka

My best friend took me to a delicious Italian restaurant in NYC called Carbone that has (hands down!) the best vodka sauce in the city tied with Il Postino. This recipe is the ultimate comfort food and couldn’t be easier. When I’ve had a really long day and need a bowl of pasta - this is it.

This dish can be made paleo or keto depending on the ‘milk’ and ‘noodle’ you decide to use. Any perk of this recipe is that you don’t need to have vodka on hand. So while it’s not technically, ‘vodka’ sauce it has the same thick flavor as your favorite vodka sauce.
