Virginia (“Gigi” as she’s known in our house) is a really good cook, among her many other talents! She’s famous for her fried rice, pork ‘adobo’, and so many other yummy dishes. When she made this dish, I didn’t think anything could top her artichoke chicken - but it did! This is hands down my favorite chicken dish I’ve EVER had! That’s a big statement, but it’s true. I would recommend making this dish anytime you need fried chicken (think chicken parmesan w/ marinara, chicken milanese, chicken nuggets, etc) and double the portion for leftovers. All of us are headed out tomorrow on a long day of flights and the top food my 2.5 year old asked for was this chicken.

This isn’t the easiest recipe that I’ve posted because of the prep time involved, but once you get the hang of it the first time, it will get easier! And it’s TOTALLY worth it. Prep / marinate the chicken and ‘breadcrumbs’ ahead to make it easier for the day-of. Since you don’t have to fry the chicken (they are baked!) there are some time-saving aspects to the recipe.
