Homemade Granola

My easy peasy yogurt recipe wouldn't be complete with some granola to put on top of it! I was pleasantly surprised to find out that granola is just as easy to make and the fun part is that there are millions of variations which means you can use whatever you have on hand in the pantry! This recipe should be as a simple guide and as long as you have some combination of nuts, coconut oil, and a little something sweet you'll make fantastic granola. 

To save some time, put any nuts, dates, or coconut flakes that need to be chopped in a food processor.

Prep time: 10 minutes
Cook time: 20 minutes


  • 1 cup of dates chopped (can substitute for raisins, currants, etc.)
  • 1/2 cup of sliced almonds
  • 1/2 cup of hulled pumpkin seeds
  • 1 cup of walnuts chopped
  • 1/2 cup of pecans chopped
  • 1/2 cup of sesame seeds
  • 1 cup of unsweetened coconut flakes
  • 1 cup of gluten free oats (optional - omit for Paleo option)
  • 1/2 of unsweetened shredded coconut
  • 4 tbsp of coconut oil
  • Salt to taste


  1. Melt 2 tbsp of coconut oil in a medium saucepan over medium heat 
  2. Add coconut flakes and oats and cook until the coconut flakes just start to brown making sure to stir frequently (~5-10 minutes)
  3. Remove the coconut flakes and oats from the heat and put aside in a separate large bowl
  4. Melt 2 tbsp of coconut oil in the same medium saucepan 
  5. Add all the remaining ingredients and cook until the nuts are lightly toasted (~10-15 minutes) making sure to stir frequently to avoid a burned bottom
  6. Remove from heat
  7. Combine all the ingredients in the bowl and stir until fully mixed
  8. Add salt to taste
  9. Store the granola in a glass airtight jar in the refrigerator for up to a month
  10. Enjoy!
